As part of Hop City 2021 at Northern Monk Brewery over the weekend of the 6th of August, we will be pouring beers from beer royalty Equilibrium Brewery as part of the festival fringe.
The beers will go on our taps from Thursday 5th August making sure that we'll have some right corkers on for you over the weekend.
Equilibrium are based in Middletown in the Hudson Valley, upstate New York. A brewery focused on science, research and of course making beers that they would love to drink. Turns out they're pretty bloody good at it too!

We'll be pouring:
Wavelength - an easy drinking 6.5% IPA
What the brewery says about the beer - a wavelength is the distance between identical points in the adjacent cycles of a waveform signal propagated in space and describes the flow of Photons. We started with oats and white wheat for a base before adding Simcoe and Mosaic to the whirlpool. To get some berry medley notes going we dry hopped with Mosaic and Citra at a 2:1 ratio.
Wavelength pours bright yellow with aromas of citrus and stone fruit with crushable flavors of mango and berry with a light refreshing finish.
dHop33 - 8.5% DIPA
What the brewery says about the beer - our latest iteration in our experimental dHop series focuses on the effect of terroir on hop character. dHop 33 starts with flaked oats and flaked wheat, has an Idaho7, mosaic, and citra WP, and a large dose of special New Zealand Cascade. New Zealand Cascade is much more tropical than its ubiquitous counterpart.
Vivid yellow in color, dHop33 has aromas of guava, dank grass, and melon with a fun flavor profile featuring notes of zippy blood orange, guava juice, passionfruit, lime, grapefruit, and melon nectar that reminds one of early morning citrus punch on the patio. The escalating rainbow melon EQ juice finish greets you just before your next sip.
Astrophysics - 6.5% IPA
What the brewery says about the beer - our love of Space, Science, Photons, E=MC^2, General and Special Relativity, and Galaxy hops come together in our newest beer, Astrophysics. Astrophysics takes the laws of physics and applies it to astrological theories to answer the hows and whys of our planets, stars, and galaxies. We find staring at the night sky and asking ourselves our own hows and whys is more enjoyable with a nice crushable IPA featuring 100% our hand selected Galaxy hops.
Astrophysics pours a vibrant milky yellow with heavy aromas of starfruit, passionfruit, tangerine Pez, and dank hops. Flavours of sweet orange flesh, passionfruit juice, cantaloupe, and gummy peach rings transition to notes of berry and yuzu before a Big Bang of our EQ juice rainbow melon finish. This beer is very soft, round, and full the pallet.
Photon Citrus - 4.8% Fruity American Pale Ale
What the brewery says about the beer - our beloved Photon American Pale Ale conditioned on freshly zested oranges, grapefruits, clementines, lemons, and limes. It is everything Photon is with a dominant but balanced blend of citrus zest that works in harmony with the flavors found in the base pale ale. Photon Citrus is light, flavorful, and zippy. We feel it’s a perfectly refreshing beer for the warmer days.
